Treaty Oak Waterloo Old Yaupon Gin is a Texas-style gin, embodying a traditional gin profile with a distinctly Texan twist, brought to you by the renowned Treaty Oak Distilling Co. This gin is a beautiful fusion of classic gin botanicals like juniper, coriander, ginger, and anise with native Texan botanicals, encapsulating the wild essence of the Texas Hill Country. The botanical journey of Waterloo No.9 Gin features a lush palette of flavors including lavender, grapefruit zest, and pecans, all harvested in Texas, alongside angelica, aniseed, lemon, orange, pecan, and rosemary, creating a delightful blend that pays homage to both traditional dry gins and the unique Hill Country flavor. Crafted in the New American style, the vapor-infused distillation process of Waterloo No.9 Gin at 94 proof helps in extracting the truest essence of each botanical, bringing forth a gin that's rich in flavor yet light and refreshing in character.  It is our take on an Old Tom Gin. With a unique botanical blend of Yaupon Holly, Juniper, Makrut lime, anise, orris root and wildflower honey, this gin will make you rethink everything you thought you knew about this spirit. Treaty Oak Distillery is named after the famous 500-year old tree in Austin, under which Stephen F. Austin signed agreements defining the borders of Texas. Our gins are called Waterloo, after the original name of Austin. We moved to Dripping Springs, a place with a rich history of gatherings and shared perspectives. In 2016, Daniel headed the expansion of Treaty Oak by moving to the 28-acre property in Dripping Springs, Texas, that is now open to the public for food and beverage service, as well live music, a ground breaking Cocktail Lab, and room for the ever expanding whiskey and gin production.
