Novo Fogo 1 Year Old Chameleon Cachaça features vanilla notes of our oak-kissed Barrel-Aged edition. It’s aged for one year in repurposed American oak barrels, just long enough to reach mixability peaks without losing its rainforest and sugarcane funk. A hazelnut nose is continued with sweet and spicy herbs in the palate and finished with lively citrus. This cachaça is inspired by Brazil’s rich heritage. Their production follows traditional methods, captures the essence of the country’s culture and history, and creates flavors that reflect Brazil’s vibrant and diverse landscape.
Novo Fogo 1 Year Old Chameleon Cachaça is Brazil’s national distilled spirit made from freshly-pressed sugarcane juice. Cachaça is 500 years old; it is an older spirit and larger category than rum. Since it’s distilled from a fresh plant, terroir matters. The terroir of the coastal Atlantic Rainforest makes Novo Fogo cachaça unique. Our home is a little town called Morretes (Mo-HEH-tes), in the middle of the largest patch of protected jungle in southern Brazil. The air is clean and fragrant with tropical fruits, flowers, and the salty sea breeze. Our healthy, estate-grown sugarcane reflects this pure rainforest environment, which is why we process the cane minimally to preserve its flavor. When you open a bottle of Novo Fogo, you can smell and taste the natural wonders of southern Brazil.
