History
La Luna Mezcal Manso Sahuayo is produced using an unclassified agave (Agave Sp) called maguey Manso Sahuayo, known locally as Manso, Chato, or Cenizo. The agave for this mezcal is harvested from the regions of Jiquilpan and Sahuayo, Michoacan. Although this agave can grow wild, the variety used for this mezcal is cultivated. The production process involves cooking the agave for 121 hours, resting it for 144 hours, fermenting for 12 days, and distilling it in a copper ācazoā and pinewood still. The artisanal approach ensures that the cooked agave is milled by hand and naturally fermented in open-air wooden vats before undergoing double distillation. The variability in ABV by batch reflects this traditional craftsmanship. La Luna Mezcal is crafted in Etucuaro, Michoacan, within the municipality of Villa Madero, home to the Perez Escot family and Destiladora Las Azucenas. This family has been dedicated to the art of mezcal-making since 1910 and is now in its fourth generation, with Isidro Perez Escot currently training his son Amador.
