History
Del Maguey Wild Jabali Mezcal is a unique spirit that is a limited edition mezcal made from agave Jabali, which is harvested from craggy rocks and cliffs. It is known for being difficult to distill due to its intricate production process. The term Jabali is the Spanish word for “wild boar,” inspired by the resemblance of the agave plant's leaves to the teeth of a boar. This mezcal is a distinguished release in the Vino de Mezcal series from their secret mezcalero, utilizing only sustainably harvested wild Jabali agaves. The agave hearts undergo a traditional roasting process in the earth, where they are buried for two weeks, imparting a deep, smoky flavor. They are then ground using a horse-drawn stone mill before undergoing fermentation with air-borne microbes, followed by double distillation. This meticulous craftsmanship results in a mezcal that was honored as Best Agave Spirit at Cocktails Spirits 2017 in Paris, further solidifying its place in the world of artisanal spirits.
