Del Maguey Wild Jabali Mezcal is floral and fragrant with prominent notes of cooked agave. Notes of caramelized figs, baked apples, star anise and a hint of parmesan. The palate is bright with sweet violets, tarragon and a slight sandalwood finish.
Del Maguey Wild Jabali Mezcal is a unique spirit that is a limited edition mezcal made from agave Jabali, which is harvested from craggy rocks and cliffs. It is known for being difficult to distill. Jabali is Spanish word for “wild boar” because the leaves on the Agave Jabali planet look like the teeth of a boar. This is another release in the Vino de Mezcal series from their secret mezcalero using only sustainable harvested wild Jabali agaves. The agave hearts are roasted in the earth and buried for two weeks, then ground using a horse drawn stone , and finally fermented with air-borne microbes and then double-distilled. This mezcal was named Best Agave Spirit at Cocktails Spirits 2017 in Paris.
