Del Maguey Wild Tepextate Mezcal is a unique spirit that is a part of the Vino de Mezcal series, showcasing the rich heritage and artisanal craftsmanship behind mezcal production. This mezcal is made by the same producer known for the acclaimed Del Maguey Tobala and the Del Maguey Espadin Especial. The process begins with the meticulous harvesting of wild Tepextate agave, which can take up to 25 years to mature. The agave hearts are roasted in the earth and buried for two weeks, imparting a deep, smoky flavor. They are then ground using a traditional horse-drawn stone mill, which preserves the integrity of the agave. The fermentation process employs air-borne microbes, allowing for a natural, wild fermentation that enhances the flavor profile. Finally, the mezcal is double-distilled, resulting in a complex and sophisticated spirit that reflects the unique terroir of the region.
