Los Javis Espadin Joven Mezcal is a premium Mezcal produced from Maguey Espadin in Santiago Matatlan, Oaxaca. This traditional spirit embodies the rich cultural heritage of mezcal production, which has been practiced for centuries in this region. The agave plants used for this mezcal are carefully selected and roasted in underground ovens, imparting a distinctive smoky flavor. After roasting, the pineapples are crushed using a traditional horse-drawn Tahona, followed by fermentation with wild, open-air yeasts. The final product is double distilled in copper pot stills, ensuring a pure and refined spirit.
